
Mark Heads Royal Kitchen
Radisson Blu Royal Hotel, Dublin has appointed Mark Ussher as executive chef.
With over 30 years of culinary experience under his belt, Mark is a member of Euro-Toques. The organisation promotes the use of local, seasonal ingredients and traditional cooking methods, and as a member, Mark brings this ethos to his menus and kitchens.
Mark’s career maps the globe, having worked in London, Abu Dhabi, and many well-known Irish properties, including The Clarence Hotel, Peacock Alley and Luttrellstown Castle. In Dublin, he achieved notable acclaim with his restaurant, L’Aubergine, which was named one of Ireland's Top 100 Restaurants by John and Sally McKenna's Bridgestone Guides just three months after opening in 2003.
Mark is looking forward to the new challenges ahead, leading and overseeing all aspects of food and beverage at Dublin’s Le Pole Square, which brings together Radisson Blu Royal Hotel, Dublin; Dublin Royal Convention Centre; Velvære Spa; Old Town Café and Old Town Wine Bar.
