Harvest Dinner for Airfield

airfield

Irish-born, London based award winning chef Robin Gill and Airfield Estate’s Culinary Lead Luke Matthews have announced a series of collaborative dining events to take place at the 38-acre urban farm and food destination in Airfield Estate, Dundrum, Dublin. The first, a Harvest Dinner on Saturday September 23rd is now on sale and Robin Gill will also host a Fermentation Master class at the Estate on Sunday September 24th.
Of the September 23rd Harvest Dinner, Robin Gill says: “It’s every chef’s dream to work farm to table, Airfield Estate is exactly that and more. Luke Matthews and I share the same manic obsession for ingredients, so we have come together to cook a harvest dinner at Airfield to showcase the incredible ingredients from their 38 acre farm and gardens.”
The Harvest Dinner on Saturday September 23rd will be a seven part tasting menu, each course showcasing the bounty the Estate’s farm, gardens and lands produce - local, seasonal, sustainable food harvested in the main on-site. Grains, Roots, Sea, Farm, Hedgerow and Dairy is the menu line-up and some surprises along the way. Diners can choose to enjoy their meal with a specially curated drinks pairing, sourced from independent brewers, vineyards and distillers. As Gill notes: “We also want to highlight the new wave of Ireland’s most passionate producers in the drinks industry.”
A charitable trust, Airfield Estate’s core mission is to reconnect the nation with the lands, the plants, the animals, and the natural world that sustains us in every-day life. Gill is recognised globally for his passionate commitment to produce-lead menus and a back-to-basics cooking approach, creating exceptional food with absolute respect for the origin of each and every ingredient. Matthews is a much respected advocate of authentic root to shoot, nose to tail cooking, nurturing a food culture at Airfield and beyond, that strives to deliver exceptional taste with minimal waste. The coming together of Gill and Matthews at Airfield Estate will be a series of inventive and wholly enjoyable dining events.
