
Florian Joins Dromoland Team
Dromoland Castle Resort has appointed Florian Lay as its new Director of Food & Beverage.
A native of Germany, Florian brings with him over 25 years of experience in luxury hospitality in Europe and the Middle East. In his new role, he will oversee the resort’s diverse culinary portfolio, including the signature restaurant Earl of Thomond, the tradition of Mrs. White’s Afternoon Tea, the Fig Tree Restaurant at the Golf & Country Club, the Cocktail Bar and Shannigans—a lively Irish gastropub at the resort’s sister property, The Inn at Dromoland.
Florian has held senior leadership roles for the openings of several of Dubai’s most celebrated hotels, including Jumeirah Al Naseem and The Mandarin Oriental Dubai. His career also includes key food and beverage leadership positions at Jumeirah Burj Al Arab, Waldorf Astoria Dubai Palm Jumeirah, The St. Regis Doha, and most recently as Director of Food & Beverage at Kempinski Mall of the Emirates.
Florian’s food and beverage journey began in Germany, where he completed his apprenticeship at the renowned Schloss Solitude in Stuttgart. He went on to refine his craft at the Michelin-starred Restaurant Zirbelstube at the Schlossgarten Hotel - part of the Leading Hotels of the World collection - and at the two Michelin-starred Restaurant Goldberg. He also contributed to the success of the celebrated Käfer Restaurant in the German Parliament building, known for its exceptional culinary standards and iconic setting.
At Dromoland Castle, Florian will work closely with resort General Manager Mark McSorley and Executive Head Chef David McCann.
