Adam Returns and Heads The Morrison Room

The Morrison Room in Maynooth, Co. Kildare, will welcome Adam Nevin as Head Chef this September.

Originally from Maynooth in County Kildare, Adam has worked in hospitality from a young age and trained at Ballymaloe Cookery School before working at The Shelbourne in Dublin. In 2017 he moved to the UK, joining Alyn Williams’ restaurant at The Westbury in London as Chef de Partie, where he worked for 18 months, before joining Tom Kerridge’s team at the two Michelin starred pub The Hand and Flowers.

Following this, Adam moved to The Dorchester in London in 2019 to The Grill at The Dorchester, first as Sous Chef, thereafter he was quickly promoted, finally to Head Chef in November 2022.

Adam is excited to return to Ireland and to his hometown of Maynooth to take up the position of Head Chef of The Morrison Room at Carton House.
