The Sodexo Ireland team took silver and second place in the 2016 Contract Caterers Culinary Challenge, at Food & Bev Live, organised by the Irish Foodservice Suppliers Association (IFSA) at CityWest Dublin.

David Fountain, head chef at PayPal Dundalk, Diarmuid Murphy, head chef at EMC Ovens in Cork and Darren Benham, head chef at Bushmills Distillery in Antrim, Northern Ireland prepared a starter of pan-fried Hake Fillet, butter poached Langoustines and a crab bonbon served with garden pea puree and Bushmills-glazed Gubbeen pancetta. It was followed by Smoked Guinea Fowl with a truffle scented barley risotto and a Clonakilty black pudding with apricot, heritage beets, carrots and girolles. Dessert was a rich Callebaut chocolate tart with a lime curd and lime ice-cream
James Plasic, catering manager, Diageo at St James Gate and Sigitas Zubrickas, supervisor at Davy were the front of house team which provided a superb and effortless fine dining and sommelier service to the lucky competition guests.
